Friday's Favorite Recipes: Mahi Mahi

Earlier this week I made baked Mahi Mahi. The Mahi Mahi was frozen, from Costco. and I set a few pieces out in the morning to thaw all day.

I combined the following into a small bowl:

2 Tbsp of olive oil
1 Tbsp of lemon juice
1 Tbsp of shredded Parmesan cheese
1 Tbsp of seafood rub (I used one from The Fresh Market)

Combine the above ingredients in a bowl and then spread onto both sides of each filet using a brush.

Put the filets in the oven for about 10 minutes (at 375) and you're done!

This recipe was simple, healthy and it tasted good too! Win Win Win!!!
