A few yummy recipes...

This afternoon we are heading to the mountains for a week. I'm so looking forward to it!!! Scarves, sweaters, apples and cider here we come! So this week I've been trying to use up our food in the fridge since we won't be here for a week and I found the following recipe on Pinterest.

Chicken Casserole














I already had all the ingredients except for two: corn flakes and almond slices. BUT...don't be alarmed because I did just so happen to have Fiber One...WITH ALMONDS! I substituted this instead of the corn flakes and it was awesome.

In preparation for a week in the mountains I made this yummy peanut butter popcorn for our trip:

Peanut Butter PopcornI'd never made popcorn on the stove before and it was a lot easier than I anticipated.  Also, there were almost NO un-popped kernels, unlike the packaged popcorn bags. I tried a few pieces and it's very yummy as well.
