So, I'm always looking for easy, low cost recipes...as I'm sure many of you are! Costco is a great place to put together frugal meals that are appetizing and yummy too!
This week, I picked up some of Costco's spinach and cheese ravioli. For $10.00 you get two packages, each package contains 20 raviolis.
I simply threw 5 raviolis into a pot of boiling water and cooked them for about 5 minutes. I removed them, placed them on my plate and topped them with about 1 TB of shredded Parmesan, and a pinch of parsley. I cut up a few cherry tomatoes and placed those on top as well. (though you could just use a few tablespoons of tomato sauce if you have that instead)
I found that it was very filling and the total cost (if you only use 5 raviolis) comes to only $1.50.
So, to summarize....a great easy meal (that can be frozen until you're ready to use), takes about 10 minutes to prepare and costs only $1.50. You can't beat that right?
I found that it was filling and delicious. Also, even after adding the cheese and tomatoes it only came to 300 calories! Not bad at all.
So if you don't have a Costco Membership, it is well worth the investment. We use ours all the time.
